Low Carb Spanish Meatballs in Spicy Cream Sauce

In Spanish meatballs are called AlbΓ³ndigas. They are a staple in the tapas menu in Spain and around the world. Typically they are made with a tomato based sauce, but we decided to make a twist to them and make a white cream sauce instead.

In a Spanish tapas recipe like this you would normally use delicious flavours such as smoked paprika and garlic together with the tangy tomato sauce. We used chipotle spice instead of the smoked paprika and mixed it together with garlic and chili. We also increased the spiciness by adding sriracha. In order to balance this out we swapped out the tomato sauce for the cream so that we could offset some of the spiciness.

Ingredients

  • Meatballs
  • 400 g ground beef

  • 30 g pork rinds

  • 1 medium onion (approx. 120 g)

  • 1 egg

  • 1tsp garlic powder

  • 1 tsp chili flakes

  • 1/2 tsp chipotle powder

  • 1/2 tsp salt and pepper

  • 1 tsp sriracha sauce

  • Cream sauce
  • 100 g heavy cream

  • 2 garlic cloves

  • 1 tsp lemon juice

  • 1/2 tsp sriracha

  • 1/2 tsp chili flakes

  • Salt to taste

Directions

  • Chop onions and blitz pork rinds in a food processor.
  • Add ground beef, onions, pork rinds, spices and sriracha to a large mixing bowl and crack an egg into the bowl. Use your hands to kneed and combine the ingredients.
  • Form approx. 10 patties / meatballs and set aside.
  • Combine all cream sauce ingredients and set aside.
  • Preheat a skillet to medium to high heat with some butter.
  • Sear each patty / meatball for 1 minute on each side. Then reduce the heat.
  • Pour over the cream sauce and cover with a lid. Let it simmer for a couple of minutes. Β‘Buen provecho!
