Don’t let the use of cottage cheese throw you off. Several people have been skeptical about this before tasting it, only to be surprised at how delicious it is! ๐
Also, if you are feeling a bit crazy I would try to put some layers of cheese inside the lasagna as well. I didn’t think of that until now, but it sounds A-M-A-Z-I-N-G! ๐ BRB.. I’m making another lasagna!



This low carb keto lasagna with cottage cheese is perfect as a meal prep. You can make it the day before, keep it in the fridge and reheat it in the oven the next day. This even tastes better the day after it has been made, when all the flavors has gotten time to mix and set. ๐

Ingredients
400 grams ground beef
50 grams pepperoni
1 can chopped tomatoes, 400 grams
2 large mushrooms, roughly 100 grams
0,5 large onion, roughly 100 grams
3 cloves of garlic
350 grams cottage cheese
1 tbsp tomato paste
1-2 tsp Sriracha (if you like it spicy ๐ถ)
100 grams cheese
- Spices
2 tsp provence
1 tsp paprika
1 tsp garlic powder
1 tsp oregano
1 tsp pepper
Salt to taste
Directions
- Roughly chop the mushrooms and fry in a dry pan. When all the water has come out of the mushrooms, set aside.
- Cook ground beef, pepperoni, onion, and garlic over medium heat until well browned.
- Add the mushroom and all the spices and stir well.
- Stir in crushed tomatoes, tomato paste and Sriracha. Let it simmer for about 15 minutes.
- Place a thin layer of the meat sauce in a 9×9 inch casserole dish. Then arrange a layer of cottage cheese. Follow up with another layer of meat sauce, then cottage cheese, then meat sauce and lastly the cheese.
- Bake in the middle of the oven for about 20 minutes at 350 F. Make sure the cheese doesn’t burn.
- Enjoy with a side of salat or some keto garlic bread ๐
