There is nothing like a real good low carb beef stew with vegetables when the temperature outside begins to drop, and all you want is to snuggle up inside with some comfort food. Regardless if it’s autumn, winter or spring, you can always enjoy this recipe! ๐Ÿ˜

In Norway, it’s tradition to eat something called lapskaus. It’s super delicious, but unfortunately it contains a lot of root vegetables and potatoes, which isn’t the best for a low carb keto diet ๐Ÿ˜“ That’s why we decided to make this recipe that we low carb’ers can eat with a good conscience.

Low carb beef stew with vegetables

For this recipe we decided to use the Crockpot slow cooker, but you can use the Instant Pot or stew it in a casserole for a while. It’s up to you!

In the slow cooker we had it on the high setting for 4 hours, but 8 hours on low would work just as fine. Maybe even better ๐Ÿค”

Low carb beef stew with vegetables

For this recipe we used beef chuck, carrots, onion, leak, and celery. We also had a tin of green beans we threw in there too. But you can also use mushrooms or other types of vegetables you like ๐Ÿ˜œ

We highly recommend topping the dish off with some sour cream and some fresh herbs ๐Ÿ‘Œ๐Ÿป

Ingredients

  • 790g Beef Chuck

  • 2 cubes Beef stock

  • 1 tin Green beans

  • 200g Carrots

  • 100g Celery

  • 60g Leak

  • 1 Onion

  • 50g Butter

  • Spices
  • 3 tbsp Red wine vinegar

  • 2 tsp Garlic powder

  • 2 tsp Thyme

  • 1 tsp Smoked paprika

  • 2-3 Bay leafs

  • Salt and pepper to taste

  • 1/2 tsp Xantamgum (Optional – For thickening)

Directions

  • Start by cutting the beef in chunks, and brown them in a pan on high temperature with butter. Salt and pepper to taste.
  • Dissolve the beef stock (if in cubes) in 4 dl of water. Add it to the casserole or slow cooker.
  • Chop the vegetables and put them in the casserole together with the meat, spices and vinegar. Let it simmer for 4-8 hours.
  • When the meat is tender and the vegetables are soft, the dish is ready.
  • Add a dollop of sour cream and enjoy!
